Intentional Play - Language and Literacy

This blog is a little different than any I have written to date.  If you don't know me personally, my back ground is child development.  I got my masters at LA Tech, many years ago and worked in the field for about 5 years before moving to the college campus.  I absolutely love all aspects of child development and hope to move back in that direction one day.  I love research and learning new things to help me get through parenting challenges.  So bear with me on this one, I hope you like a little change of pace.  Let me know what you think.

About a year ago, I blogged about trying to create intentional play scenarios for RL.  This was before the birth of R so even though at the time it seemed difficult to fit this in to daily life, now it seems almost impossible.

I function in life by planning, organizing, and writing things down.  I absolutely will never remember, show up, complete, succeed, or accomplish without the specific task written down.  For me this includes, what I want to do with my kids.  How I want to raise them, what I want to teach them, fun traditions for holidays......a serious obsession with planning and writing.  I wish that I could do things on the fly, but attempts always equal disappointment somewhere. People place judgement on moms who forget important things...."how did she forget his soccer game?, how did she forget his shoes? did she bring him to school today?"  This could totally be me if something comes up to threaten my consistent schedule of life.

I am not ashamed of this and have learned to embrace it.  I mean, at 33 I have to accept myself at some point, right??

Bringing me back to my point.  Intentional play.  As a working mom, I constantly struggle with providing RL  enough learning opportunities.  I trust and PRAY that she is learning in "school" (daycare), but I believe it is a parents job to encourage and support outside learning not just be dependent it on it.  One of my focuses with RL is Language and Literacy.

She has a speech delay due to 11 ear infections when she was younger.  Yes, ELEVEN.  She is improving, but certainly still needs continous support in this area, as well as, literacy.  Unfortunately, my child is not a fan of books. :(  I could totally review and criticize all of the decisions I have made along the way that lead her to this (not enough reading, not providing an example, too much technology), but instead I am trying to move forward before it gets worse!! Literacy is such a HUGE influence on school readiness, successfully adapting to school, self-confidence, and overall well-being.  Because of all of this, I know that I must be intentional on supporting further language development and literacy outcomes.

After doing some research and skimming over the obvious.....reading....talking......pointing everyday things out, I came across some perhaps "obvious" suggestions that I am just not always great at doing.

1) Ask open ended questions - For example..."What tiny little bugs! Where do you think they are going?"  This seems easy enough, but sometimes life buries the time just to intentionally stop and ask questions.

2) Make up rhymes, recite child-friendly poems.  - Sure this is a great idea! Now, think of a poem or rhyme right now, real quick.  Crickets...crickets.  I couldn't think of one either.  I need to be intentional and let myself rhyme silly words while cooking dinner.

3) Celebrate their attempts at independence - Yes we say "Good Job", "You did it" all of the time.  These are easy ways to quickly celebrate.  However, we need to also identify what they accomplished.  "You climbed high, you are growing and getting stronger" or "I love the way you set the table, you are helping your bother learn".  Intentional to notice the action and encourage it.

4) "Play" with literacy - Encourage pretend play.  Use props, dress up, brooms, grocery and make up stories with your child.  Help them understand order, imagination, new words, new ideas. Intentionally sit down and play outside of the box.

5) Encourage your child to think logically - take the stories of the book and allow your child to think about the situation and determine what will come next.  Not by memorization, but by logical thinking.  Intentionally choose a book that sets up this scenario for your child.

My key word is intentional......this is just how I do life.  I have to think through it, plan it, write it down, and set a goal for success.

Roasted Carrots


I had two bags of baby carrots that I purchased from the brookshires BOGO sitting in my fridge patiently waiting to be used. I am not a fan of carrots, but I know that I need to do a better job of serving fresh fruits and veggies to my fam over the convenience of canned goods (although I will never give these up)

So I decided to roast them the same way I previously did the zuchinni.

Preheat oven to 425. Cover the cookie sheet with evoo and mix around the carrots. Season with red pepper flakes.



Roast for about 20 minutes



Oh mi this was goodness. I def like carrots this way and would crave it with any meal.

I wanted to try out a new season, but I was too scared to step out of my norm. Maybe next time.

Meal Plan this Week 8/25

It's a light week for meals and I am excited about this!! We are gearing up for company this weekend, so I will be making plans to feed 4 extra people and looking for the best deals!  Of course, its time for football food so I can't wait to make those snack all day recipes!

Sunday - Salads with whatever is in the fridge, left over squash

Monday - Tacos (tukey meat (BOGO brookshires) cooked and frozen in freezer from freezer cooking Sundays

Tuesday - Left overs

Chocolate Chip Pudding Cookies

A while back I scored multiple boxes of free Jello-O pudding at Family Dollar.  Now, I needed to decide what I was going to do with all of this pudding!!  So, of course like any intelligent woman would do, I searched pinterest.
There were a ton of ideas and I settled on a recipe for chocolate chip pudding cookies!!  I adjusted a recipe from "What Megan's Cooking"


Ingredients:

1 stick of butter
1/2 cup brown sugar
1/2 cup sugar
3.4 oz pkg instant chocolate  pudding mix
2 eggs
1 tbl vanilla
2 1/4 cup flour
1 tsp baking soda
1/2 tsp salt
1/2 tsp baking powder
1/2 cup chocolate chips

directions:

Preheat oven to 350 degrees. In a large bowl, cream together the butter and sugar. Beat in the eggs, one at a time, and the vanilla.

In a separate bowl mix together the flour, dry pudding mix, baking soda, baking powder, and salt. Slowly mix the dry ingredients into the wet ingredients. Fold in the chocolate chips.

Roll the dough into balls and place. Bake for about 10-15 depending on the bakeware you use.

**I used my pampered chef stoneware.  I find this to make an amazing difference when cooking cookies.  I highly recommend if you bake alot of cookies!!




They were a hit!! I brought them to a neighborhood porch party and another batch to work and they were gone in a flash!! People commented on the texture and the fact that they were not overly rich.  Let me also add the the dough was awesome!! :)

Family Talk

Let's take a break from the meals and deals tonight and talk family for a minute. It has been a rough few days in the Emory household. Rl was sick this weekend with a throat infection and R got shots (which he does not respond well to). Both had fever and were extremely unpleasant. D and I did our best to distract and comfort, but my goodness it was challenging!!!

Rl is feeling better, but has gone a little crazy the last couple of days. She is transitioning into a new classroom at school, so I am sure that that has something to do with her new behavior. Throwing things, biting me when mad, yelling "no" and "stop" at the top of her lungs in my face and a fierce battle to go to bed. I can handle most things, but the tragic battle for bedtime I am struggling to deal with effectively. We have been a little lax lately on her bedtime routine, so maybe the conistency of steps to bed were more important than I thought.

The baby has decided that he hates dinner time and screams in the highchair. This child has a temper!!!! He doesnt make it
further than one bite of baby food because he freaks out if you do not give him the spoon. I am serious. Freaks.out.loudly. I am planning to rework what I serve him going in the direction of what he can eat himself. Hopefully this will help.

We need peace for all again. :)

Lima Beans


Both my kids are a little under the weather today and it was anextremely busy day at work, so I.AM.TIRED!!

I wanted to do a quick post on the fresh lima beans that I cooked this weekend.

I dumped fresh (still frozen) lima beans in a skillet and added 1/4 cup butter, 1 tablespoon of sea salt, 2 tablespoons of pepper, chopped onion, and finely chopped carrots.



Add a couple of cups of water. Cover and cook for about 30 minutes.

I was so impressed with these!!! I forgot how much better they are fresh vs canned.

The items that we must have carry the majority of the load with the total of baby items and cereal costing $35.70.  So the total for EVERYTHING else is THIRTY ONE CENTS!!! Wow!!!!!

You might have heard (or read) me mention that my hubs has challenged me to keep the grocery bill to a minimum this month (so not stock piling unless free)  I am right on track and will give a break down at the end of the month.  I don't count diapers in my month grocery shopping bill, so with tax today I spent $21!!  Getting ready for the shopping trip took me about 20 minutes.

Crock Pot Pork Chops

Do you have these ingredients plus some pork chops?



If yes is your answer, than you have an easy crock pot meal waiting on you!

Throw 1/2 cup brown sugar, 1/2 cup soy, 1/2 cup ketchup, and sliced onions on the top of 4 porkchops. Other than the number of pork chops, the measurements are complete estimates.  I did not measure anything just poured over the pork chops until I felt like they were covered, but it "looked" like 1/2 a cup each.



I sliced up a small onion (over the weekend) and added it on top.



Cook on low for 6 hours.






The Results

D gave it a 8.5. The pork chops tasted like roast. The sauce was really good though. I added a little corn starch and used it as gravy. The salad has sauteed celery and carrots on top.

The pork chops, onions, lettuce, and salad dressing are all from the BOGO sale at Brookshires.

Roasted okra

Oh my these were so addicting. I seriously almost ate the entire cookie sheet of okra. They were like little healthier french fries!

Slice fresh okra into 1 to 2 inches in length. Line cookie sheet with wax paper and preheat oven to 450.

Drizzle okra with evoo and season with pepper, sea salt, and garlic powder

Roast for about 15 to 20 minutes. Reseason after removing from oven.






If you like okra, you will LOVE this!

Kids Crafts - Colored Bubbles

I found this neat idea on a blog a while back and put it in my back pocket for a day that RL gets bored and in need for something new.

She doesnt sit for crafts for more than probably 5 minutes at a time, but this held her attention for a full 10 minutes!!

I filled a baby food jar with milk and added food coloring. Then allowed her to blow bubbles!!



Make sure to place the jar in something to catch the mess (whoops. I got too excited!)












Now change up the colors!












She liked to watch the colors mix.












We were a big fan of this activity!!!!

Honey Mustard Chicken in the Crockpot

I had my purse on my shoulder and the baby strapped into his carseat this morning when I remembered that I needed to prepare dinner in the crockpot this morning!

I discover more and more everyday that my memory is slowly becoming non functional.  Are you ever driving somewhere and then you forget where you are going?  Do you forget something you just decided to do a mere two minutes ago? I often make mention of this to my friends and co-workers.  You know what the most common response is?  "Two young kids will do that to you".  Well, if that is the case.....I've got a long way to go.

The point of my pitiful me story was to demonstrate how quickly this can be thrown together.  I didn't want to drag out any measuring aids, so my directions are estimates.

Place chicken in crockpot and season with salt and pepper.  You can use tenders or breasts.

Mix together:

about a 1/2 cup of honey mustard or honey D (I used Kens Honey Mustard Dressing from BOGO brookshires)

about 1/4 cup of syrup (I used homemade - leftover from my banana pancakes recipe)

about 2 tablespoons of red wine vinegar

Poor over chicken and cook on low for about 4 hours or 6 if using frozen chicken.



Thats it!!! It is a little tricky if you are gone from 8 to 5.  It will work if you come home for lunch, have a timer on your crockpot, or have a husband that works from home (which is my case).  This is the closest I can ever get him to cooking!

These will be great for sandwiches, over a salad, over rice, over veggies. The options are endless!  I just plan to do them along side the roasted zucchini.  I have been craving this masterpiece since my initial discovery of goodness.  Go back a few blogs for this recipe!!

I also had celery, onions, and carrots already finely chopped so I sauteed them for extra veggies.



THE RESULTS:

D gave this an 8.5 bc the chicken was a little dry. I think if you are using tenders, they need to be cooked closer to 3 1/2. I will def use this again for a quick easy meal.
