Ordering Coupons
Did you know that you can order clipped newspaper coupons online? Perhaps you see a deal matched on a blog, but your newspaper did not publish the coupon or you see a weekly sale on your favorite product and you want to stock up.........these are the times you may consider ordering!!!!
If you have been following my blog for a while, you know our family's two main items are kellogg's cereal and wheat thins. About once a week, I will check the site coupondede.com for available coupons for these products. The site charges you a shipping and handling for the coupon, however if you are committed to using the coupon vs not having one at all you will still come out on top. You must meet a minimum of $3.00 spending to order.
Here is my couon order this week:
Nabisco crackers (wheat thins) -10
Kellogg Cereal - 10
Jeannie - O Turkey Meat -3
Swim Diapers (hello....beach!) - 3
I am spending about $3 to receive about $24 in savings, so still getting a $20 savings without matching with a sale!!!!
This is a great option for those of you that are not interested in a getting a paper and sorting, cutting, and organizing coupons. Why not just order the ones you need? Super simple!!!

Quick Update
Ruddick's appointment in Shreveport went really well yesterday. We "should' have results by the end of the day, however, the CLS that performed the test does not "expect" to see any negative results. HIP HIP HOORAY!!
Let me take this moment to admit a pet peeve I have about MYSELF!! I am such a planner and an organizer but yet I never have it all together. Yesterday I fumbled around under pressure like a first time mom and for sure did not display characteristics of a 3 1/2 year vet. I struggled putting R into the stroller, I dropped things out of the diaper bag, I didn't bring a paci clip so I picked up a paci 99,999 times, I ran out of snacks, no sippy cup, and on and on and on. As much as I dream of an organized life, God did not create me that way. My gene make up argues against itself. One side of the brain has anxiety build up without things in order and the other side intentionally creates mess and confusion because the stress of trying to be perfectly organized is too much to handle. Does this make sense to anyone? Let me give you a visual.

This is a very important week. It is the week that, hopefully, my life will start to slow down and prepare my heart in soul for my upcoming beach vacation. Yes...that is right folks.....I am vacating this town and relocating my bottom to the sandy beaches of Pensacola Florida. Be still my heart.

Mother's Day..
Wait what? Was it Mother's Day? Really? Are you sure?
Yes, this is a big ole dose of sarcasm for your reading pleasure. I spent my mother's day tucked away in our lovely home spending quality (forced) time with my family. Some may describe my lovely home as toxic and it has been for the last few days.
Me, D, and RL were all invaded with strep and it has been simply awful. RL felt better within a day of her shot, but mom and dad not so much. Parenting on 10% energy is not an easy task and I did not do it successfully. My kids may or may not have had pop sickles for dinner.
D promises a "do-over" for mother's day. Its a good thing I pat myself on the back often, cause this rumored "do-over" will never happen.
We must move forward into the week because it is RECITAL week!!! RL's first dance recital!!!! Oh, the excitement!!!

Crock pot chicken
I purchased defrosted chicken from sams and wanted to make a quick crock pot meal.
This is what I had in my pantry. Texmex tomatoes, corn, and fajita seasoning. I really wanted to add black beans, but I was out.
I drained the corn before adding and then added the rest of the ingredients with the chicken. Cooked on Low for 8 hours.
Piled the mixture in taco bowls, but could be used in crunchy tacos or over rice or just plain.
-This was pretty good. Didn't blow me a way, but certainly good enough for the 5 minutes it took me to throw it together!!

Weekend Wrap Up
Another packed weekend in the Emory household. It never stops........never ever ever does it stop.
Friday I presented a scholarship to a Sterlington highschool student. I really liked the size of the school. I know that it will be significantly larger by the time my kids go there, but I enjoyed the feel of the school.
I did some more labeling with my new business adventure. I went labeling crazy. I love it.
We did many other things that were not photo documented. Honestly now I can't even remember what those things were! I have moved on to this crazy week with another one to follow.
This week is a dud in terms of deals, but I will post a couple tomorrow.
Today I am taking my son for labwork. More test for this sweet baby boy. :(

Zucchini Spaghetti
Okay folks, I have exactly 5 weeks and a few days to prepare for my summer beach trip. However lets call it what it is, I have exactly 5 weeks and a few days before I have to put on a bathing suit and stand shamefully on a beach full of skinny in shape people. I can just imagine beautifully shapped women running bay watch style across the sandy shore. I imagine myself trying to contain overflowing fatty jiggles as I yell at my kids not to eat sand or throw it in each other eyes.
Back to the low carb diet I go. My work roommate was nice enough to remind me of the idea to replace spaghetti with zucchini. So that is what I did. I sliced in 1/2 length wise and then boiled for about 8 minutes.
Seasoned with salt and pepper, covered with spaghetti sauce, topped with feta cheese (bc that is all I had) and baked at 350 for about 10 minutes.
Oh my, so good and so filling. I can actually feel my beach bod being sculpted!!!
Back to the low carb diet I go. My work roommate was nice enough to remind me of the idea to replace spaghetti with zucchini. So that is what I did. I sliced in 1/2 length wise and then boiled for about 8 minutes.
