Bbq Shrimp

My meal plan got a little thrown off this week. I planned on teaching a couponing class and serving chicken salad sandwhiches. Unfortunately, it is SO hard to get women together without a million things coming up!!

So I moved up shrimp night and changed it to bbq shrimp that I recently pinned bc i had all the ingredients. Yay!!

Barbecue Butter

Shrimp

Directions:

  1. For Barbecue Butter -- Soften butter at room temperature to 70-80 degrees F. Place butter in mixing bowl; add pepper, cayenne pepper, paprika, salt, rosemary, garlic, Worcestershire, Tabasco, and water. Whip on high speed 3 minutes or until thoroughly blended. Refrigerate to 40 degrees F. Makes about 2 1/2 cups.
  2. For Shrimp -- Pour olive oil in a hot sauté pan. Add shrimp to the sauté pan and cook on one side for 1 to 2 minutes. (Don't crowd; if necessary, use 2 pans. A 12-inch pan will accommodate 1 pound of shrimp.) Reduce heat to medium, turn shrimp, and add the chopped green onion. Cook for an additional 1 to 2 minutes.
  3. Add white wine and cook until reduced to 1/4 cup. Stir in 1 cup cold Barbecue Butter (reserve the remainder for another use), reduce heat to low and cook and stir frequently until shrimp are just done (white throughout, moist and tender), approximately 1 1/2 minutes. Take care not to overcook the shrimp.
  4. Serve immediately in a bowl preheated to 160 degrees F.

As always, I hardly ever measure and almost always add more flavor than suggested. So, if you want yours to taste as yummy as mine (and you do) add a little plus sign to each measurement other than the water.







Taste the butter at this point. If you feel like there isnt enough flavor add it. My butter was good!!

Cook shrimp as directed. Here is mine after I added the butter sauce.






Once the shrimp is done I added a little cayenne, pepper, and rosemary (from the jar).

This shrimp needs to be served over something that can soak up this wonderful sauce.




This is a low effort inexpensive option.

This was crazy good!!!! D gave it a 9.9 and RL loves shrimp (I washed off a little spice for her).

I will make this again and often!!

Monday Meal Plan

Here is the plan for the week!!

Sunday - BBQ Shredded Chicken Sandwich with Roasted Bell Peppers

Monday - Leftovers

Tuesday - Ranch Chicken Salad Sandwiches (pending - May have guests that night to serve)

Wednesday - Garlic Shrimp

Thursday - Turkey Burgers (make extra)

Friday - leftovers

I have been obsessed with roasting veggies lately.  I am usually a sautee kind of girl, but I have been loving this new roasting option.  The Cons:  it takes a little while to get them truly done and it makes my kitchen smokey.  The Pros:  You can throw them in the oven and not have to do anything else until their done.  Plus, everything roasted is deliciousness!!

Roasted Bell Peppers:

I picked up Red Bell Peppers from the Brookshires BOGO sale this week.  I typically do not buy Red Peppers because of the price, but I thought I would try them out since they were on sale.  I also recently read a recommendation that roasted red peppers are a good table food option for babies. 

I sliced them up and spread them over a cookie sheet covered with wax paper and drizzled with EVOO.  I chose not to season them at this point since the baby would be eating some.

Cook in the oven set to 425 for 20 minutes.  They could have stayed in longer, but I had a pacing daddy and a clingy two year old that needed to be fed pronto!!

I removed a few peppers for baby R and then seasoned HEAVILY with Sea Salt, Garlic Powder, Pepper, Old Bay Season, and Tony's.  Season, taste, and add as needed.

You can season with anything you like.  We prefer a kick in the taste and are NOT fans of bland food.  It took quite a bit of seasoning to give these a good flavor.  However, they were quite yummy in the end.



Baby R was not ready for the pepper.  He had trouble controlling it in his mouth and almost gave me a panic attack!!

Favorite Things Friday

Today is my birthday eve and you would think that I would include my birthday in a favorite things post, right? Nope. It's not one of my favorite things. Unless I start turning YOUNGER its just another day.



For those of you who have known me a while, this may come as a shock. Many moons ago, I spent the week of September 7th thinking I was Queen of all those before me.  I rocked out with a new outfit, reminded people of the important countdown, and seriously felt as if it were the most important day of the year.












Layers of maturity later, I have stepped down from my high horse and realized that for me, September 7th has a different meaning.  I have had a couple of years that on this date, I was going through some really rough times.  They were out of my control and sometimes life just doesn't care that its your birthday!! The rough times kind of took the wind out of my celebration sail and turned Septmeber 7th into a day of memories.

THIS is my Friday Favorite.....



This knock out of a woman is my grandmother Mama-Betty.  Every single year before she passed away SHE made my birthday special. 

I am 1 of 3 first cousins on her side and we all have birthdays within a month of each other.  Every year we would have a family birthday party at my grandparents house to celebrate.  My cousin and I would share a chocolate cake and my sister had her own white cake.  I can still feel the excitement of looking forward to this day.  Whats crazy is that I do not have a single memory of my "regular" birthday parties.  The ones you had a McDonalds, Pizza Hut, or the park.  Not one single memory.  I only remember the birthday parties with my family.






As I got older and distance would not allow the cousins to get together for a birthday party, Mama-Betty still made sure that she made me feel special on this day.  She would drive her Lincoln town car to my college apartment with a birthday cake in hand.  A birthday cake complete with frosted roses (my favorite part) and the cursive words that read "Happy Birthday Julie".  The cakes she served were always THE BEST.  My friends new she would deliver, so they always made sure to be available to help me eat it!!

So now, my birthday no longer means "What am I getting" or "Where is my cake", but instead my time to reflect and remember all of the special memories that Mama-Betty created for me.  This is why I smile on September 7th.  Not because I have survived one more year, but because I can still feel the warmth of her smile and hear her voice saying "Happy Birthday".

There are other deals out there, but this is all I need this week.  Remember that sales always come back around so don't get out of control.  Since I still have meat in the freezer from previous sales and my dad just dropped off a ton of deer meat, this will be all I need for the week!

Brookshires' sales run Wednesday through Tuesday.  The earlier you shop the better the selection, but they typically don't completely run out.

Ibotta - A Fun Way to Earn Cash

Have you heard of Ibotta?  It's an app that allows you to earn extra cash on various items and I love it!!

What you need:  The Ibotta App, Store Receipt, Item Purchased

Here is how it works:

First step:  Download the app and set it up!!

Next....browse the many items that you can earn extra cash when purchasing.



**Now, here is the deal.  Just like with coupons or any saving money strategy, DO NOT buy the item JUST because it appears on Ibotta.  You should be looking for items that you use regardless of price or items that using the Ibotta offer stacked with a coupon equal free or a moneymaker.  This happens OFTEN**

Underneath the items, you will notice the amount of money you can earn for each product.

Select your product.



You have multiple options of tasks to complete in order to earn cash.  They are simple and take no more than 1 minute to complete all three.  Tasks include polls to answer, a video to watch, and sometimes posting to facebook, as well as, many more.

Once you have completed the tasks for each item, you will touch the redeem button at the bottom of your screen.  This will take you to the screen to select the store where you purchased the item (you will need to enter each new store and it will save the ones you use).



Next, take a picture of your receipt.






Then you will need to scan your item.

That's it!!! You've collected cash!!  The amount will save on your Ibotta account until you have earned at least $5.  Then you will be able to transfer it directly to your paypal account.  How easy is that?!?

Make sure to also check out the bonuses and store extras for additional savings.
So far I have earned $10 with my Ibotta app.  I love having it in my paypal account to make me feel a little less guilty when I splurge on a cute outfit. :)
